Gluten Free Lemon Drizzle Flapjack

Are they for breakfast or dessert? Who knows, (who actually cares?) but I do know, that these lemon drizzle flapjacks are amazing and they almost feel sort of healthy with oats and lemon. I was inspired by the Graze Lemon Flapjacks which are so incredible and wanted to try and replicate it but make it Gluten Free also. The recipes itself is super easy to do, just melt some stuff and whack some stuff in a bowl and bake!

Ingredients (for a 9inch tin): 150g unsalted butter 150g caster sugar 350g porridge oats (in my case Gluten Free Oats) 5 tbsp lemon curd Zest of 2 lemons Juice of 1/2 lemon 1 tbsp golden syrup (optional)

Icing: 200g sieved icing sugar Juice of 1/2 to 1 lemon

Method:

Step One | Preheat the oven to 180c or Gas mark 4.

Step Two | Melt the butter and sugar together in a pan. Once melted remove from the heat.

Step Three | Add all of the other ingredients into the bowl and stir well!

Step Four | Press into your tin (if non-stick line with baking paper first) and put into the oven for 20-25 mins until golden brown around the edges and allow to cool.

Step Five | For the icing: Measure out the icing sugar and squeeze half a lemon until a think icing forms. You can add another half like I did for a drizzle style, or leave it thicker in order to pipe (or leave it off completely).
